Ramadan triangles stuffed pizza


Ramadan Samosa with Pizza Filling

Serving Size: Serves up to 4 people

Ingredients:

  • 2 cups of tomato paste
  • 1 tablespoon of brown sugar
  • 1 teaspoon of thyme leaves
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried parsley
  • 3 cloves garlic smoothly minced
  • 250g of Sunbulah Shredded Mozzarella
  • Salt as per your preference
  • ¼ cup of hot water
  • 1 pack of Sunbulah Mixed vegetables or Sunbulah Spinach
  • 1 pack of Sunbulah Spring Roll Pastry

Preparing the Filling:

  • Place the tomato paste, brown sugar, herbs and spices in a pot.
  • Pour hot water into the same pot and add the mixed vegetables or spinach.
  • Stir all the ingredients together and leave to cook for 10 minutes.

Preparing the Samosa:

  • Spread the spring roll pastry sheets out and place the previously cooked filling in the center of each sheet.
  • Sprinkle bits of shredded mozzarella over the mixture
  • Fold the spring roll with the filling inside in the shape of a samosa triangle by cutting out leftover parts.
  • Place each samosa on a cooking tray and lightly brush with vegetable oil. Then bake in the oven for 7 minutes until golden brown.
  • Try serving this dish with a side of Sunbulah French Fries
  • Spinach is good source of vitamin A and folic acid.
